May 3 - Tea Class: Wakoucha - Japan’s Black Tea Revival

This month, we’re exploring Wakoucha, Japanese black tea, with a lineup of six or more unique teas from Kyoto, Shizuoka, and Ibaraki.

Learn how new-generation farmers are reviving and reinventing this lesser-known style, from teas made with 100-year-old zairai plants to ones crafted from shaded leaves meant for gyokuro.

Vivid, umami-rich, and deeply rooted in tradition, Matcha is more than just powdered tea, it’s a craft. In this session, we’ll explore its journey from leaf to powder, tasting each part of the tea plant—leaf, stem, and powder—to understand its transformation.

June 14 - Tea Class: Shincha & the Uncommon Greens

June’s tea class celebrates the season’s freshest harvest: Shincha, alongside unique teas like Tamaryokucha, Kamairicha, and a rare Gardenia-scented Sencha.

We’ll taste a vibrant lineup of Japanese green teas and compare Chinese and Japanese steamed green tea to explore subtle processing differences. The session also includes a look at Japanese teaware and how it shapes your brewing experience.
